Menu Plan Monday

So when I made my menu last week on Monday it was 65 degrees.  Then all of the sudden it was in the 30’s the rest of the week and I was not in the mood for sandwiches anymore!  So a couple hot dishes/soup got substituted for dishes I had planned!  And I had most if not all of the ingredients on hand for those dishes as well.  Just to show you your menu doesn’t have to be written in stone!

So here is what is on the plan this week:

  • Leftover lasagna
  • Tacos
  • Macaroni + Cheese soup (my hubby is going to LOVE this one!)
  • Chicken + bacon quesadillas
  • Fajita chicken soup
  • Breakfast for dinner –hashbrown casserole, eggs, bacon

New recipe: Dripping roast beef sandwiches with melted provolone

I saw this recipe in the Parade magazine last Sunday and thought it looked good (recipe also online at Campbell’s Kitchen).  My husband is not a huge sandwich fan, BUT a hot sandwich with melted cheese is a different story!   :)

I picked up the ingredients at Publix while shopping on Monday.  I used a foot long loaf of wheat french bread (on sale for $1.00!) instead of the hoagie rolls, and just cut it into 4 sandwich size sections.

Here is the recipe (from Campbell’s Kitchen)

1 can Campbell's® Condensed French Onion Soup
1 tablespoon reduced sodium Worcestershire sauce
3/4 pound thinly sliced deli roast beef
4 Pepperidge Farm® Classic Soft Hoagie Rolls with Sesame Seeds
4 slices deli provolone cheese cut in half
1/4 cup drained hot or mild pickled banana pepper rings
  • Heat the oven to 400°F.
  • Heat the soup and Worcestershire in a 2-quart saucepan over medium-high heat to a boil. Add the beef and heat through, stirring occasionally.
  • Divide the beef evenly among the rolls. Top the beef with the cheese slices and place the sandwiches onto a baking sheet.
  • Bake for 3 minutes or until the sandwiches are toasted and the cheese is melted.  Spoon the soup mixture onto the sandwiches.  Top each sandwich with 1 tablespoon pepper rings.
(We did not use the banana pepper rings.)

They were soooo YUMMY and, better yet, MY HUSBAND loved them!  And they only took about 10 minutes to prepare.  These will definitely be on the menu again! :)

Cost:
Wheat french bread - $1.00
Can of soup - $1.25
1/2 lb of deli roast beef - $3.50
Provolone cheese - $2.00
Total: $7.25 (and it made 4 servings/sandwiches) so $1.93 each serving
We each ate 1 sandwich for supper, and another sandwich for lunch the next day.

I bought the soup at full price, so it would have been cheaper if I had stocked up when it was on sale.  Will definitely be watching for it to go on sale.  Plus Publix deli meat is rather expensive, so if roast beef was on sale it would be cheaper.

Décor on a Dime: A platter and $1.00 decal turned art

I promised when I showed you my de-cluttered/redecorated kitchen that I would tell you how I made the “There’s no place like HOME” platter you see on top of my fridge.

I shared that I found these great wall decals/stickers for $1.00 at my local Dollar Tree!  Can you believe it – only $1.00!!   (If I had a Silhouette or a Cricut machine, I could have just made my own custom sayings!  I’m just saying – just in case my husband is reading this! :)

I have 2 of these white platters.  They are too big to display in my china cabinet and too big to fit in my top cabinets.  AND I don’t have display space above my cabinets (sooooo wish I did!)  So, I thought this was the next best thing – display it on top of my cleaned off fridge!

I chose one of my favorite sayings and just stuck it on the platter!  SO EASY!!  :)  And then stuck the platter in a stand that I got at Michael’s. 

It is a removable sticker so I can always take it off.  Although, I think if I took it on and off multiple times it would eventually wear out the sticker, so I don’t plan on removing it for a while.

But for now, I wasn’t using it much as a platter so why not use it as art instead! :)  I am all for using what you have!

By the way, these decals would look great on any white plate/platter, in a frame, or on a slat of white painted wood, and many other ways!

Dollar Tree finds!

I stopped by Dollar Tree yesterday to see what was new and what Valentine decorations they might have.  (Can you believe Valentine’s Day is just around the corner?? :)

Here is what I found:

Loved the huge packs of paper doilies – they have up to 30 in each pack!  All for $1.00!  I am planning a Valentine banner to go below my mantel with the small ones – stay tuned for details! :)

I love these little white birds!  I have used them almost every season.  (There are some on my winter mantel now.)

Then I found some more of these wall decals/sayings.  (You can find them in the housewares/hardware aisle with the rest of the wallpaper.)  I can’t believe these are only $1.00!!

Décor on a Dime: Christmas evergreen wreath turned winter wreath!

This was my front door at Christmas.  I had never had a real evergreen wreath before but had always wanted one.  I got a coupon for $10 off $10 purchase from Lowe’s, AND the wreath was only $12, so ….it came home with me! :)  I added some ornaments and a bow and this is how it looked for Christmas.

Even though I have seldom watered it, it was still green and smelling great the first week of January!  I hated to just throw it away, so tried to think of a way to transition it into winter.  I removed the ornaments, bow, and berries and sprayed it with some fake snow spray I got on clearance at Wal-mart for $0.62. :)  Loved the “snowy” look and it wasn’t looking “Christmasy” anymore – yay!

Then I remembered a white berry wreath (that I found at a yard sale before Christmas) and how much I liked my fall magnolia wreath layered with white berries.

I just hung the white berry wreath on the hook with the evergreen wreath and tucked it in here and there.  I whipped up a simple bow out of some silvery (Christmas!) ribbon and tucked it in among the berries…

And my Christmas wreath is now a Winter wreath! :) 

Perfect to transition into spring.

My $2.00 investment before Christmas has definitely paid for itself! :)  By the way, I just took these pictures this week and the wreath is still looking great! 

(Wonder how long it is going to last??  Don’t think I can transition it to a spring wreath, BUT if it is still alive I might just have to think of something! :)
